Ingredients
  1. 8 oz cool whip
  2. 1⁄4 t pepperment extract
  3. 1⁄3 c sugar
  4. 2 T milk
  5. 3 oz cream cheese, softened
  6. 1 8 inch graham cracker crust
  7. 3 T hot water (3 or 4)
  8. 2 c chocolate covered mint cookies, crushed
  9. 6 dr green food coloring (6 to 10)
Instructions
  1. Set aside 2 tbsp cookie crumbs for garnish.
  2. In a bowl, combine remaining crumbs with enough hot water to make crumbs spreadable.
  3. Spoon over the graham cracker crust; spread out evenly; set aside.
  4. In a mixing bowl, beat cream cheese until fluffy. Add the sugar, milk and extract; beat until smooth.
  5. Fold in whipped topping.
  6. If food coloring is desired, divide mixture in half and add coloring to one half.
  7. Alternately spoon mounds of plain and colored mixture into crust; swirl with a knife.
  8. Sprinkle with reserved cookie crumbs.
  9. Cover and refrigerate for 3 hours or until firm.
