A tasty Italian soup with bacon, spinach & pasta

Ingredients
- 1 c small seashell pasta, cooked
- 3 T chopped fresh parsley
- 1 t dried oregano
- 3 T chopped fresh basil
- 1⁄2 pk frozen chopped spinach, thawed
- 2 cn 14 oz diced tomatoes with juice
- 2 stalks celery, chopped
- 1 carrot, peeled and sliced thin
- 4 cn 14.5 oz chicken broth
- 2 clv garlic, minced
- 4 sli bacon, chopped
- 1 cn 19 oz white beans
- 1 sm zucchini
- 1 lg onion, chopped
- salt and pepper
- parmesan cheese
Instructions
- In a large saucepan over medium heat, cook bacon until crispy.
- Remove from pan with a slotted spoon.
- Add onions and garlic to bacon fat.
- Cook, stirring frequently, until tender.
- Add chicken broth, carrots, celery and tomatoes.
- Bring to a boil, reduce heat and simmer for 30 minutes.
- Add spinach, zucchini, basil, parsley, oregano and beans.
- Simmer for 30 minutes.
- Add pasta and season to taste with salt and pepper.
- Sprinkle with bacon and Parmesan cheese.
