Mexican Chicken and Rice Casserole

Ingredients
- 2 c mahatma rice or 1 boil-in-bag rice
- 2 c 8 oz monterey jack cheese, shredded
- 1 1⁄2 c chicken breast, cooked and chopped
- 1 cn evaporated milk
- 1⁄2 c red onion, chopped
- 2 lg eggs, lightly beaten
- 1⁄4 c fresh cilantro, finely chopped
- 2 T butter or margin, melted
- 1 t jalapenos, diced (optional)
Instructions
- Preheat oven to 350 degrees.
- Coat a 2-quart oven-proof casserole dish with nonstick cooking spray.
- In a large bowl, stir to combine all ingredients well.
- Pour into prepared dish and bake 30 minutes.
