Ingredients
  1. 1 pk pineapple cake mix
  2. 1 med can crushed pineapple
  3. 1⁄4 stk butter
  4. 1 c sugar
  5. 1 c coconut (or 2 cups)
  6. 1 c pecans, chopped (if desired)
Instructions
  1. Mix cake mix as directed reserving 3/4 cup of batter.
  2. Bake cake as directed.
  3. In a saucepan, take the 3/4 cup of batter, sugar, pineapple and butter
  4. Cook over medium heat until thickened.
  5. Remove from heat and add coconut and pecans and spoon over semi-cooled cake. This will not spread like a frosting, you have to spoon over cake and gently spread in small sections.
Notes
  1. If you bake in layers, do not add as much coconut so icing will spread better and be thinner.
