Pineapple Cake

Ingredients
- 1 pk pineapple cake mix
- 1 med can crushed pineapple
- 1⁄4 stk butter
- 1 c sugar
- 1 c coconut (or 2 cups)
- 1 c pecans, chopped (if desired)
Instructions
- Mix cake mix as directed reserving 3/4 cup of batter.
- Bake cake as directed.
- In a saucepan, take the 3/4 cup of batter, sugar, pineapple and butter
- Cook over medium heat until thickened.
- Remove from heat and add coconut and pecans and spoon over semi-cooled cake. This will not spread like a frosting, you have to spoon over cake and gently spread in small sections.
Notes
- If you bake in layers, do not add as much coconut so icing will spread better and be thinner.
