Pineapple Carrot Cake

Ingredients
  1. 1 1⁄2 c oil
  2. 3 eggs
  3. 2 c sugar
  4. 2 1⁄2 c flour
  5. 2 t baking soda
  6. 1 t salt
  7. 2 t cinnamon
  8. 2 t vanilla
  9. 1 c grated carrots
  10. 1 c crushed pineapple, well drained
  11. 1 c nuts, chopped
  12. 1 c sugar (for icing)
  13. 1 T corn syrup (for icing)
  14. 1⁄2 c buttermilk (for icing)
  15. 1 t baking soda (for icing)
  16. 1⁄2 c butter (for icing)
Instructions
  1. Mix oil, eggs, sugar until well blended.
  2. Add flour, soda, salt, cinnamon and vanilla, mix well.
  3. Add carrots, pineapple and nuts.
  4. Bake 45-50 minutes at 350 degrees.
  5. Then glaze hot cake with Butter Glaze icing.
Icing instructions
  1. Mix sugar, corn syrup, buttermilk, baking soda and butter.
  2. Cook over low heat 5 minutes and pour over hot cake.
