Pineapple Carrot Cake

Ingredients
- 1 1⁄2 c oil
- 3 eggs
- 2 c sugar
- 2 1⁄2 c flour
- 2 t baking soda
- 1 t salt
- 2 t cinnamon
- 2 t vanilla
- 1 c grated carrots
- 1 c crushed pineapple, well drained
- 1 c nuts, chopped
- 1 c sugar (for icing)
- 1 T corn syrup (for icing)
- 1⁄2 c buttermilk (for icing)
- 1 t baking soda (for icing)
- 1⁄2 c butter (for icing)
Instructions
- Mix oil, eggs, sugar until well blended.
- Add flour, soda, salt, cinnamon and vanilla, mix well.
- Add carrots, pineapple and nuts.
- Bake 45-50 minutes at 350 degrees.
- Then glaze hot cake with Butter Glaze icing.
Icing instructions
- Mix sugar, corn syrup, buttermilk, baking soda and butter.
- Cook over low heat 5 minutes and pour over hot cake.
