Ingredients
  1. 8 lg potatoes
  2. 2 T flour
  3. 3 T parsley flakes
  4. 8 oz cream cheese, softened
  5. 1 salt and pepper to taste
  6. 2 T chives, chopped
  7. 6 oz can french fried onions
  8. 2 c cheddar cheese, shredded
  9. 2 eggs, beaten
Instructions
  1. Preheat oven to 325 degrees.
  2. Cook the potatoes in water to cover in a saucepan.
  3. Drain and cool slightly.
  4. Peel the potatoes and place in a bowl.
  5. Beat with a hand mixer until the potatoes are mashed.
  6. Add salt, pepper, cream cheese, eggs, flour, parsley and chives.
  7. Beat until well mixed.
  8. Stir in onions.
  9. Spoon into a buttered 1 quart baking dish.
  10. Bake for 30 minutes.
