Ingredients
- 8 lg potatoes
- 2 T flour
- 3 T parsley flakes
- 8 oz cream cheese, softened
- 1 salt and pepper to taste
- 2 T chives, chopped
- 6 oz can french fried onions
- 2 c cheddar cheese, shredded
- 2 eggs, beaten
Instructions
- Preheat oven to 325 degrees.
- Cook the potatoes in water to cover in a saucepan.
- Drain and cool slightly.
- Peel the potatoes and place in a bowl.
- Beat with a hand mixer until the potatoes are mashed.
- Add salt, pepper, cream cheese, eggs, flour, parsley and chives.
- Beat until well mixed.
- Stir in onions.
- Spoon into a buttered 1 quart baking dish.
- Bake for 30 minutes.
